Vendor shall at all applicable times keep a time and temperature log for all non-shelf stable items used for an Event. Logs are required at the onset of every Event and every two (2) hours for items held below 40 degrees and above 140 degree
Fahrenheit. Logs are to be held for not less than thirty (30) days after an Event and must be provided to Food Fleet promptly upon request.
FOOD & BEVERAGE NOTES
Menu: Limited truck menu, 4-5 options max with one being vegetarian
Guaranteed Minimum: $1,500.00
Commission: 12% of net sales (before tax and tip) or guaranteed minimum (whichever is higher)
# of trucks: 1 savory truck per shift
Please only allow 1WO meals per person, while a line is present.
You MAY allow more than two meals per person if there is NO LINE.
Payment: Guests will pay trucks $5 all-inclusive at the time of ordering and the client will subsidize the remaining $10 for a total of $15 per meal all inclusive (entrée+ side only, no drinks in this price). If guests would like to purchase drinks this will be handled separately.
